Evergreen Coffee Shop + Boutique Hotel - 2085 Pine St, Redding, CA

We hit the road at 6AM and didn’t make our first stop until we got here for some coffee & matcha. Such a cute little coffee shop and tiny boutique hotel upstairs. Kind-of in the middle of nowhere but super adorable!

Roots Juice Bar - 1950 Pine St, Redding, CA

Hi-Lo Cafe - 88 S Weed Blvd #2607, Weed, CA

Weed, CA was uhh…very interesting. Let’s just say we didn’t stay long and only grabbed a quick breakfast and then hit the road again until we got to Oregon.

Medford, OR - In general a great rest stop along the drive, lots of food choices, gas, Trader Joe’s, Target, In N Out etc.

Bagel Tree Cafe - 228 NE Jackson St, Roseburg, OR

This was by far the most random surprise on our drive up! We actually returned and made a stop on the way back home once we left Portland because their bagel's were THAT good.

Tokyo Sando - 321 SW 2nd Ave

10/10 would recommend to everyone. We both got the Miso Chicken Katsu! I told Danny whenever we come back to Portland we are definitely pickin’ up a sando again.

Bamboo Sushi - 310 SE 28th Ave

Portland Mercado - 7238 SE Foster Rd

Danny’s cousin Nina (thank you again for hosting us!) took us here our last night! The music, drinks and overall vibe was great. I love that they had food carts from all different countries: Cuba, Colombia, Mexico, Argentina and so much more.

Probably my favorite meal all weekend! It’s filipino/asian fusion and honestly everything we ordered was delicious.

Blue Star Donuts - 3325 SE Division St Suite 1

A lot of their locations are now closed due to covid. But, this location thankfully was still open and serving! I’m team Blue Star vs Voodoo Donuts any day.

I fell in LOVE with this coffee shop! It was at the top of my list of new places to check out and it did not disappoint at all.

This bar is right next to Keeper Coffee and the owner/bartender Ari (sp?) was the coolest and so friendly! They have wine, sake and a ton of cool beers on tap.

Places & Things To-do

Secret Hike! I couldn’t even tell you the location because Danny’s cousin Nina took us. All I know is it was about 1.5 hrs outside of Portland and the view was gorgeous. We got there just in time to see the last bit of the springtime bloom!

Thank you again to Danny’s cousin, Nina + her pup Cooper for hosting us in her brand new home! It was very much needed for the both of us to get away for a little road trip and get a change of scenery. Also, I thought fall in Portland is beautiful (which it still is) but spring in Portland? I absolutely LOVED it. Everything was blooming and so vibrant on every corner. We can’t wait to be back again soon!
